What are sunflower seeds protein?

Sunflower seed protein is also written as sunflower seeds protein, also known as sunflower protein. It is a protein product that uses defatted sunflower seed cake as a raw material to remove the shell, chlorogenic acid, caffeic acid and other phenolic acid compounds.

Except for the content of lysine, the content of other essential amino acids is higher than or similar to the FAO value, so lysine is the first limiting amino acid of sunflower seeds. Although the lysine content is low, the effective lysine content can be as high as 90%. Protein sunflower seeds are rich in sulfur-containing amino acids such as methionine. Compared with most plant based protein, sunflower seeds protein has a good digestibility (90%) and a higher biological value (60%).


The application of protein sunflower seeds:

1. For general food. 1%~2% of defatted sunflower seeds protein powder is steamed for 1 hour after moist heat and added to bread and other foods to strengthen nutrition, make up for the lack of essential amino acids in flour, and increase the elasticity of bread crumbs to prevent flour The effect of starch aging.

2. A good additive for baby food. Compared with soybean protein, protein sunflower seeds have lower lysine content, but higher methionine content. Combine sunflower seeds protein with soy protein and add it to infant foods to enhance nutrition.


3. Additives in meat products. When sunflower seed protein is added to sausages and other meat products, the shrinkage is small during smoking, which can not only prevent oil separation and reduce weight loss, but also increase the tenderness of sausages and make the products more palatable. Adding sunflower seed tissue protein (30%) to fillings of pies, buns, dumplings and other foods instead of pork can not only reduce animal fat in foods, reduce cholesterol content, but also reduce costs.


4. Make artificial milk and other beverages. Protein sunflower seeds have a soft odor and no peculiar smell such as bey, and are a good raw material for high-end beverages and artificial milk. The sunflower seeds protein concentrate is heat-treated at 80°C and mechanically stirred and then added with an emulsifier to make a 3% protein-containing emulsion.
